Salmon MacCheese
Macaroni cheese is like a blank canvas waiting for some inspiration. Add any combination of ingredients that tickles your fancy and your dish will be transformed from a reliable mainstay into a masterpiece. My favourites are chicken and chorizo; salmon and dill; smoked snoek, mascarpone and blue cheese … there is a palette of choices waiting to be explored.
Ingredients:
- 250g Cooked Penne Pasta
- 1 Chopped Onion
- Butter for frying
- 120g Hot Smoked Salmon Bites (from Woolworths)
- 1 T chopped Dill
- 200g Fresh Cheese Sauce
- 125ml Fresh Cream
- Salt & Pepper
- 125g Grated Mozzarella
Method:
Fry onion in butter till soft and translucent. Add the Salmon pieces, dill, cheese sauce, cream, salt and pepper.
Layer pasta and salmon mixture in a casserole dish. Sprinkle with grated mozzarella.
Bake at 180° for 30 minutes.
